Banana Blueberry Muffins
Paleo muffins (no added sweetener)
Ingredients:
3 eggs
3-4 ripe mashed bananas
1 tsp. vanilla extract
1 Tbsp. apple cider vinegar or lemon juice
1/2 c. tapioca flour
1 1/2 c. almond flour
1/4. c. coconut flour
1 Tbsp. cinnamon
1/4 tsp. salt
1 tsp. baking soda
1 c. blueberries
Combine wet ingredients, then stir in dry ingredients until just combined. Fold in blueberries.
Pour into greased or lined muffin cups.
Bake for 25-30 minutes at 350 degrees
Makes 12 muffins
